  • Prep: 45 mins
  • Yields: Makes 30 croquettes

Breadfruit 1

Butter 50 g

Breadcrumbs 250 g

Frying oil 1 lt

Salt & pepper to taste

Peeled tomato (blend) 1 can

Onion (diced small) 1

Garlic (chopped) 3 cloves

Dried red chillies(break in 2) 4

Cream 100 ml Cooking oil 2 tbsp

Fresh Coriander 1 bunch

1Remove the skin of the breadfruit and cut into large chunks. Place in a bowl of water to remove excess milk. Steam the pieces until soft (avoid boiling in water, this will add water to the fruit).

2Mash the pieces and add butter, salt & pepper. Wet the hands and make up cylinder like shape. Roll in the breadcrumbs. Fry or freeze for later use.

3In a small pot, put garlic, chilis and oil. Put on very low heat and cook until garlic is golden brown. Add onions, salt & pepper and cook until onions are soft.

4Add tomato and cook until a thick consistency. Add cream and chopped stalks of coriander, cook for 1 minute. Turn off heat and stir in the butter.

5Wait until completely cooled down and add the coriander leaves chopped. Serve.
