A Mauritian staple for lunch or dinner. Made with cashews instead of the usual peanuts, this dip is delicious on rice, rotisserie, bread or even pasta. Tasty and good for you!

Ingredients
300g Cashews
500g Tomatoes
10g Garlic, roughly chopped
1bunch Mint, washed
10g Onions, roughly chopped
25g Olive oil
2g Salt
0.25pc Lemon, juice only
Directions
1Pre-heat oven at 1800C
2Lightly roast the cashews for 5-6 mins
3Cool and reserve
4Wash & core tomatoes
5Roughly chop and add to the food processor
6Add cashews, olive oil, garlic, mint, onions, salt & lemon juice
7Blend until the chattini is semi-smooth
8Taste and adjust seasoning
9Serve as a dip, sauce for pasta, or even on bread as tapas
10Note: The chattini should be studded with small chunks of cashews for texture
