Coconut Cream Cake

Light and fragrant egg free cake flavoured with coconut cream. Best enjoyed with coffee or tea.

  • Yields: Serves 10 - 12


200ml coconut cream

140g butter

120g sugar

150g flour

75g coconut flour

8g baking powder


1Preheat oven to 180°C

2Cream butter and sugar

3Add remaining ingredients and mix until well combined

4Pour batter in a lined baking tray

5Bake for about 45 minutes or until a skewer comes out clean when testing.

6Allow to cool and slice. Cake can be served warm or cold.
