

Mediterranean Pasta Salad – Gluten Free & Vegetarian

Excite your appetite with a taste of our gluten free Mediterranean green pea pasta salad, made with feta, grapes, and olives.

- Yields: 3 - 4 servings
Ingredients
500g Waitrose Green pea pasta, cooked*
30g Red bell pepper, small dice
30g Yellow bell pepper, small dice
30g Green bell pepper, small dice
30g English cucumber, small dice
75g Crimson seedless grapes, halved
30g Waitrose Black olives a la grecque, sliced
30g Waitrose Plump Spanish pitted queen olives, sliced
75g Clover Feta, small dice
60ml Food Lover's Jalapeno flavoured olive oil
1.5pc Lemon, juice only
5g Food Lover's Salt & Pepper Mix
60g Dew Crisp Italian salad
15g Health Connection Wholefoods Sunflower seeds, lightly roasted
*Please note that 1 box of pasta makes 500g of cooked pasta
Directions
1Cook pasta according to package instructions (Al dente - 5 mins). Drain and transfer to a mixing bowl. Lightly coat with some jalapeno flavoured olive oil to prevent sticking. Allow to cool and reserve,
2Gently mix peppers, cucumbers, grapes, olives, & feta to the cooled pasta. Add remaining jalapeno flavoured olive oil and the juice of 1.5 lemons. Season to taste with salt and pepper grinder.
3Transfer to an adequate salad bowl and garnish edges with lettuce leaves. Chill in the refrigerator until ready to serve. Garnish with lightly toasted sunflower seeds and enjoy.
