Thai Coconut Corn Soup August 20, 2018 Cook: 15 mins Yields: 4 - 5 servings Ingredients 20g Onion, small dice 3g Ginger paste 3g garlic paste 18g Thai red curry paste 1 can Waitrose chicken consomme soup 1 can Waitrose coconut milk 1 can Food Lover's cream style sweet corn 0.5pc Lemon, juice only Cilantro leaves as garnish Directions 1Sweat onions in a saucepan with some cooking oil (canola or sunflower) over a low flame 2Add ginger, garlic & red curry pastes and lightly cook until fragrant 3Deglaze with can of chicken consomme 4Add the cans of coconut milk and cream style sweet corn 5Finish soup with lemon juice and garnish with some cilantro leaves 6Serve hot 7You can also make a meal out of this soup by adding rice noodles, chicken, mushrooms & cherry tomatoesContains: Shrimp Soybean oil Celery extract 00:00
